I had been doing so based on the theory that dietary fat contributes to the buildup of cholesterol in coronary arteries...a theory that seemed to have been confirmed by several preliminary studies.
Think of all the heart patients who might have benefited if doctors back then had been willing to recommend a low-fat diet. After all, the risk of cutting down on fat is pretty small. The situation is similar with vitamin supplements today. There are theoretical reasons to take antioxidants (including vitamins C and E and the mineral selenium). They gobble up free radicals, ubiquitous molecules that are thought to contribute to the development of both cancer and heart disease. And the evidence is that the risk of taking moderate doses of these vitamins is pretty small. In that spirit, here are my educated guesses. Every morning, in addition to a multivitamin with minerals, I take 250 milligrams (mg) of vitamin C, 400 international units of natural vitamin E and 200 micrograms of selenium. Whenever possible, I buy inexpensive store brands. Even though I take these supplements, I firmly believe that a healthful diet is more important. If you eat poorly, I doubt you can undo all the damage by popping a few vitamins. Accordingly, I've been a not-too-strict vegetarian for years, consuming mostly whole grains, fruits, legumes, vegetables, a little fish and some low-fat dairy products like yogurt. To me, the vitamins are like a little added insurance. My educated guesses could turn out to be wrong, so by all means stay tuned. New evidence might suggest the benefits of some vitamins not previously understood...while discrediting others. Like me, plenty of doctors take dietary supplements, even if they don't recommend them to their patients. In this case, you may want to do what we do... and not what we say.

In the 1980s, doctors and patients found out that the drug minoxidil does help grow--and regrow hair. It just didn't work predictably well for many of those who tried it. Ten years and countless trials later, some dermatologists think that a three-drug regimen may be more successful in battling baldness. This less common regimen involves mixing Rogaine (minoxidil), now available over the counter, with Proscar (finasteride), originally a medication for prostate enlargement, and thyroid hormone. The application method is similar to what is suggested on the packages of minoxidil: Rub it into the scalp every day. Of course, this combination treatment will cost more....but early results are promising.

Widely recognized for their potential to diminish an enlarged prostate gland, say studies at major medical institutions such as the University of Chicago. But say palmetto may also help prevent baldness by blocking the body's production of dihydrotestosterone (DHT), a substance that deadens hair follicles. Male pattern baldness is a form of hormone-related hair loss. But of more concern to many men and women afflicted with hair loss is alopecia areata, a lesser-known disorder that causes hair loss in nearly 4 million Americans. Typically, hair grows in cycles of two to six years, after which hair lies dormant and then falls out. On a normal head, some hair is at the beginning of the cycle while some is further along in the growth cycle. With alopecia areata, some or all of the hair follicles stop growing at the same time, leaving tiny bald spots or complete baldness. Normally, hair will grow back in anywhere from six months to a year. But for those afflicted, the wait can be devastating.
Sun Drying... This is the original dehydration method. Some commercial food processors continue to use it, but trying it at home is more trouble than it's worth. Sun drying demands near-perfect low humidity conditions and temperatures in the high 80s to assure a reasonable amount of success. And even if you manage to meet these rather difficult requirements, food dried in the sun will take several days as compared to several hours in a dehydrator. Because sun drying takes so long, the food produced is of lower quality and nutritional value. Food is at the mercy of insects, dirt, and the elements. It is the least expensive way to dehydrate food and it can accommodate large quantities at one time.
Solar Drying... Promoted during World War II, solar drying is somewhat more efficient than traditional sun drying because of the increased temperatures. It also refined the drying process by (a) a tracking system to follow the sun, (b) a venting system to control the temperature, (c) enough space for construction and efficient operation, and (d) a back-up system to provide an alternative heat source and a fan to circulate air. However, despite these apparent improvements, it is still unpredictable, slow, time-consuming, and offers no assurance of food quality.
Air & Shade Drying... Spoilage is a significant problem with both these methods of food preservation. Because of the lack of the sun's heat, drying times are extended greatly. As a result, the time required to dry the food product is dry for a period of time that can range from several days to weeks. If you ever have time to spare, you might want to experiment with one unique form of air drying called "string drying." Slices of produce are strung on long pieces of string and hung from nails or rafters in a warm room. One of the most popular foods dried this way was whole string beans, or "leather britches."
Oven Drying... Although many people use standard, convection, and microwave ovens for drying food, oven drying, on the whole, is very "iffy." While generally a vast improvement over some of the older methods of dehydrating, scorching is usually a major problem. Also, food frequently comes out more brittle, darker in texture, and less tasty. Often times, normal oven usage is interrupted for long periods of time and the energy cost is usually substantially greater than an electric food dehydrator. Remember that standard, convection, and microwave ovens were manufactured for purposes other than dehydrating; therefore, oven drying is usually unsuccessful.
