Black Turmeric Root, called Kali haldi in India , is an exotic variety native to India and southeast Asia. Flowers are pink or maroon but the leaf is also attractive with a maroon streak in the midrib. The rhizomes start out as a light pink and turn blue during maturity. The scent of the root is camphor-like and reminds me of rocket fuel. Black Turmeric is Intensely bitter, making the root more suitable for medicinal purposes than cookery.
